Purchased by the Walker family in 1959, Gillespie Station was originally part of the Northampton Downs sheep stud and for many years concentrated on sheep and wool production. In 1981 the family sold the remaining sheep in order to focus on cattle.
Today the Walkers raise Santa Gertrudis cattle, a breed suited to drier climates. A considered breeding program sees only the best finest cattle selected for the central breeding herd.
Gillespie has been organic since 2004, gaining USDA certification in 2005 and becoming the third producer in the country to achieve certification to Step 4 in the GAP (Global Animal Partnership) program.
