Lamb for the grill

Lamb makes a great lean alternative for grilling and can be cooked in under 8 minutes. Chops, cutlets and loins are perfect for quick grilling as well as broiling or frying.  They are a delicious healthy meal served with vegetables.  They can even be served on their own as satisfying appetizers.

Lamb roasts for beginners

Lamb is the perfect light roast for mild weather.  Lamb rack roasts are especially great for those new to lamb. They are easy to cook and have a mild sweet aromatic flavor when lightly seasoned.

Lamb done slow

Lamb braises are a fantastic way to inject some exotic flavor. Braises work equally well with the sweet and fuller flavored cuts so you can experiment with the flavor intensity. For a fuller flavored braise opt for lamb neck, shoulder or shank. You can tone down the intensity by trimming away any flavor containing fat.

Flavors to pair with lamb

Lamb works well with Mediterranean flavors such as garlic, mint, rosemary, thyme and lemon which combine to make mouth-watering roasts. Exotic sweet and spicy flavors also work well with lamb, especially when cooked into rich braise or mixed into a stuffing. Festive flavors like pumpkin, cinnamon, nutmeg, ginger and preserved fruits also work a treat.

Lamb, healthy and nutritious
