When the colder months approach and the chill sets in, a nice way to keep warm is with your nighttime meals. One evening why not move away from comfort dinners and classic dishes to try something a bit different?
Here are two special recipes to make the most of your organic beef:
Vodka marinated steak
This dish highlights your meat with a delicious marinade. To make it combine 1tbsp maldon salt, 2tbsp crushed black peppercorns, 3tbsp finely chopped fresh parsley, 2tbsp finely chopped thyme, 3 cloves crushed garlic, 60ml olive oil and the kicker, 80ml vodka. Put this fresh and powerful marinade into a freezer bag with 700 grams of beef rump and leave for about two days in the fridge. This might sound like a long time, but it really allows your meat to be imbued with flavour.
To cook your meat, sear it on both sides with a bit of vegetable oil in a large pan. Then turn the heat down and place a lid over the pan so it can continue to cook through – all it takes is 3.5 minutes on both side for rare beef. When it’s done, wrap it in a layer of foil to rest for 15 minutes.
A delicious sauce is easy to make with your marinade. Simply strain into a measuring jug and add 150ml of beef stock. In a frying pan, allow to deglaze. Wait until the sauce is sizzling to whisk in 15g butter.
To serve, cut into thin, diagonal slices and pour over your sauces. This recipe will serve six people. Accompany your meat with a fresh salad with a fruity twist.
Middle Eastern beef kofta
Spicy meals are bound to get you warm. This beef kofta recipe is special but also very easy to make. Combine 700g minced beef with a finely chopped onion, 2 cloves crushed garlic, 1tbsp lemon juice, 1tsp ground coriander, 1tsp ground cumin, 2tbsp pinenuts, 2tbsp freshly chopped coriander, 2tbsp freshly chopped mint and 1 egg yolk.
Cover and put in the fridge. When half an hour has passed, roll the mixture into balls and put on skewers. Cook on a hot oiled pan until they’re brown. Serve with hummus and lemon wedges on couscous, or include as part of a mezze platter.
